Established in 1815, by Charles Louis Noel Billaud, the domaine has been the cornerstone of Chablis winemaking for over two centuries. The controlling family owns around 17 hectares of prime vineyards, all within a 2km radius of the winery. The vines' average age is over 50 years, with some plots reaching 80 years, rooted in limestone soils rich in fossilised oyster shells, which contribute to their Chablis minerality.
A vibrant, finely etched Chardonnay with aromas of lemon zest, green apple, and acacia blossom. The palate is intense and mineral, showing chalk and a touch of white peach. Crispness that drives a long, saline finish, with subtle notes of almond and flint.
